Pan Seared Peaches and Plums with Sweetened Mascarpone

Ingredients:

  • 4 Tbsp of melted butter (or canola oil)
  • 2 Tbsp dark brown sugar
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • 2 peaches, skins on, pits removed
  • 2 plums, skins on, pits removed
  • Ingredients for the Honey Mascarpone Cream:
  • 1 cup mascarpone cheese
  • ½ cup whipping cream
  • 2 Tbsp honey
  • ¼ tsp vanilla extract

Method:

Pan Seared Peaches and Plums:

Whisk butter, sugar, and spices together. Add the fruit and toss well. Transfer to a roasting pan and cook at 375 degrees for 30-40 minutes.

For the Honey Mascarpone Cream:

In a bowl, add all the ingredients and whip together with an electric mixer until soft peaks form. To assemble the dish, lay the fruit, then the mascarapone cream in alternate layers in a clear wine glass.
